Strawberry Tart (for 22–24 cm tart pan)
For the crust:
• 200 g all-purpose flour
• 100 g cold butter, cubed
• 1 egg yolk
• 1–2 tbsp cold water
• 1 tbsp sugar
• Pinch of salt
Mix flour, sugar, and salt. Rub in cold butter until crumbly. Add yolk and cold water, knead quickly. Chill 30 min. Roll out, press into tart pan. Bake with baking weights at 180°C for 15 min, then without for 10 min.
For the custard cream:
• 300 ml milk
• 2 egg yolks
• 2 tbsp sugar
• 1 tbsp cornstarch
• 1 tbsp flour
• 1 tsp vanilla extract
• 20 g butter
Whisk yolks, sugar, cornstarch, and flour. Heat milk. Gradually add hot milk to yolks, stirring. Cook until thick. Add butter and vanilla. Cool.
Topping:
• 300–400 g strawberries (washed, dried, sliced)
• 1–2 tsp apricot jam + 1 tsp water (heated and strained for glaze)
Assemble: Spread cooled cream in tart shell, top with strawberries, glaze for shine.

Sorrel Sauce for Potatoes
Ingredients:
• 1 cup fresh sorrel (chopped)
• 1 small onion (finely diced)
• 1 tbsp butter
• 1 tsp flour
• 150 ml sour cream or cream
• Salt and pepper to taste
Sauté onion in butter until soft. Add flour, cook briefly. Add sorrel, cook 1–2 minutes. Stir in cream, season, and simmer until slightly thickened. Serve warm over boiled potatoes.
