**Pumpkin and Cottage Cheese Casserole**

**Cottage Cheese Layer:**
- β
Cottage cheese (not dry) β 400g
- β
Eggs β 2
- β
Sugar β 60-80g
- β
Vanilla sugar β 1 tsp
- β
Yogurt or kefir β 100g
- β
Flour β 3-4 tbsp (heaping)
- β
Poppy seeds β 1-2 tbsp
**Pumpkin Layer:**
- β
Pumpkin β 500-700g
- β
Eggs β 2
- β
Sugar β 30-60g
- β
Lemon or orange zest
- β
Flour β 3-4 tbsp (heaping)
**Instructions:**
1. Preheat the oven to 190Β°C (375Β°F) and bake for 40-45 minutes.
2. **Roasting the Pumpkin**: Weβll need about 600g of pumpkin. Slice it and roast at 200Β°C (390Β°F) until soft, approximately 30-50 minutes.
3. **Preparing the Cottage Cheese Layer**: While the pumpkin is roasting, combine 400g of cottage cheese, 2 eggs, sugar, and vanilla sugar in a bowl. Add 100g of kefir (or yogurt), 3-4 heaping tablespoons of flour, and 1 tablespoon of poppy seeds. Blend well with a hand blender. Adjust consistency if needed β add a bit of milk if too thick, or more flour if too thin (the final texture will depend on the moisture content of the cottage cheese).
4. **Preparing the Pumpkin Layer**: Once the pumpkin is cooked and slightly cooled, peel it. Add 2 eggs, sugar (adjust to taste based on the pumpkinβs sweetness), and freshly grated orange (or lemon) zest. Add 4 tablespoons of flour and blend with a hand blender until smooth.
5. **Assembling the Casserole**: Line the bottom of the baking dish with parchment paper and grease the sides with butter. Spoon 2 tablespoons of the cottage cheese mixture into the dish, then 2 tablespoons of the pumpkin mixture, alternating until all the batter is used up. Make sure both mixtures have similar consistency.
6. Bake in the preheated oven for 45-50 minutes.
7. Once baked, allow it to cool to room temperature, and for best results, refrigerate for a couple of hours before serving. Enjoy)
